INGREDIENTS
1 lb. shrimp, peeled and deveined, tails removed
3 tablespoons olive oil or avocado oil
2–3 cups shredded green cabbage
1/4 cup Cotija cheese
1 cup chopped white onions
2 cloves garlic
1 small bunch cilantro, chopped
Corn tortillas
Hot + Spicy Fancy Sauce
Lime wedges for serving
Salt + pepper for taste

First, finely chop the cabbage and onions. Place aside in a bowl. Next, slice the garlic.

In a small skillet, heat the oil over medium-high heat. Add the chopped garlic and sauté till golden. Place to the side.

In a large skillet, heat the oil over medium-high heat. Add the shrimp to the hot pan and sauté for 5-8 minutes, flipping occasionally, until the shrimp is cooked through.

In a bowl, place grilled shrimp and sautéed garlic. Mix together well.

Assemble tacos: First, top one warm corn tortilla with 3-4 shrimp and sprinkle with chopped onion, shredded cabbage, Cojita cheese, and cilantro (if desired).
